Overnight Oats with Berry Compote
Creamy rolled oats soaked overnight in yogurt and almond milk, topped with a warm mixed berry compote, chia seeds, and honey.
π Ingredients
- 2 cups rolled oats
- 2 cups unsweetened almond milk
- 1 cup Greek yogurt
- 2 tbsp chia seeds
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 300g mixed berries (fresh or frozen)
- 2 tbsp honey
- 1 tsp lemon juice
- pinch cinnamon
- 2 tbsp almond flakes, toasted

Stir oats, almond milk, yogurt, chia seeds, maple syrup, and vanilla together.

Divide into 4 jars. Cover and refrigerate overnight (or minimum 6 hours).

Make berry compote: simmer berries with honey and lemon juice 8-10 minutes until jammy.

Cool compote slightly, stir in cinnamon.

Top each jar with warm or cooled berry compote.

Scatter toasted almond flakes and serve.
